Tasty Thursday: Oven-Baked Chicken Parmesan

I love food. But cooking fancy meals (i.e. anything other than basics like pasta and pre-packaged things) hasn’t been my strong suit. One of my goals for 2015 is to change that and start cooking more and eating healthier. A couple weeks ago I was really craving an Italian dish (my favorite!) for dinner, but wanted to master it on my own. As I sat in the parking lot of Publix making a last minute grocery shopping list, I gave myself the crazy idea that I could whip up chicken parmesan. So I went for it.

What You’ll Need (Ingredients)

  • 1 & 1/2 lbs. boneless skinless chicken breasts
  • 2 eggs
  • 1 cup Italian-style bread crumbs
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • Pasta (optional)

Directions

Preheat oven to 400 degrees.
Grease 13×9-inch pan.
Set 2 bowls on counter. Fill one with bread crumbs.
Whisk 2 eggs in second bowl.

Dip both sides of chicken into egg mixture, and then breadcrumbs, evenly coating both sides.

Place chicken breasts in greased pan and bake in oven for 25 minutes (or until chicken is done).

Take chicken out of oven and top with marinara sauce and (lots of) cheese.

 

Place chicken + sauce + cheese back into the oven for 5 minutes to melt cheese.

Voila, It’s done! If you’re going for an Italian dish as a whole (like I was), you can also whip up some basic spaghetti and bread on the side for a complete (and totally filling) delicious meal!
