Over the weekend my sisters stayed over and we decided to do some baking, one of our favorite activities when we’re all together! Plus, any excuse to bust out my KitchenAid mixer makes me a very happy girl! After spending some time debating over recipes I had pinned to my “Baking” board, we settled on a recipe for s’mores cookies. Yum!
Ingredients (What You’ll Need)
11 tbsp. butter, softened
1 cup brown sugar
½ cup granulated sugar
2 large eggs
1 tsp. vanilla
1 tsp. baking soda
½ tsp. sea salt
2 ½ cups flour
½ cup semi-sweet chocolate chips (or white chocolate chips)
1 cup mini marshmallows
3 regular sized Hershey’s bars
2 packages of graham crackers
In a large bowl, pour in the flour, baking soda, and sea salt. Then, mix in butter, white + brown sugar, eggs, and vanilla.
Add the chocolate chips and marshmallows to the mixture. Then, chill dough in refrigerator for 1-2 hours.
Place graham crackers side by side in the pan in 3 rows. Then, scoop a spoonful of dough and place in the middle of each graham cracker (press down slightly so the dough isn’t completely round), and bake in the oven for 5 minutes.
Remove pan from oven and press 1-2 pieces of chocolate on top of dough. Then place back in the oven for an additional 6-8 minutes.
Once the edges are golden brown, they’re ready to come out! Let the pan sit out for a few minutes to cool before cutting, otherwise they’ll fall apart pretty easily.
