It’s been a few months since I’ve done a Tasty Thursday post, but today, it’s back in action! One of the desserts I decided to make over the weekend for Easter was lemon cookies. I thought it’d be a good one to try – something different than the usual desserts we have. I stumbled across this particular recipe on one of my favorite baking blogs, Love from the Oven and made a slight tweak to it. It’s not a recipe completely from scratch, but it’s still very tasty, and super easy to make!
What You’ll Need (Ingredients)
1 box lemon cake mix (I used a 16.25 oz box)
2 tbsp. flour
1/2 tsp. baking powder
1/3 cup vegetable oil
Juice from one lemon
(Optional: 1/2-1 cup of white chocolate morsels)
Mix the lemon cake mix, 2 tbsp. flour, 1/2 tsp. baking powder, 2 eggs, 1/3 cup vegetable oil, and juice from one lemon together in a bowl. (Optional: Mix in 1/2-1 cup of white chocolate chip morsels).
Place bowl of dough in refrigerator and allow to chill for 30-60 minutes.
When ready to bake, preheat oven to 375 degrees.
Remove cookie dough from fridge and scoop onto a cookie sheet covered with parchment paper. Bake for 8-10 minutes or until very lightly browned.
