Tasty Thursday: Chicken & Broccoli Alfredo

I’m not Italian, but I should’ve been. There are three foods I love more than anything: pasta, bread and cheese. So when I look for dinner recipes to cook, something that incorporates those ingredients are right up my alley! A couple days ago, I made my family a chicken alfredo dish that was a huge hit. Here are the directions to a great (and filling!) meal that can feed a lot or a little!
What You Need:
Homemade Alfredo Sauce (recipe below)
3-4 cooked chicken breasts (depending on how many you are feeding)
2 cups of cooked broccoli
Pasta (whichever type you prefer)
Cook chicken in method desired. I just cooked mine on the stove. Add chicken and broccoli to Alfredo sauce and heat through. Serve over hot, cooked pasta noodles.

Alfredo Sauce:
1/2 cup (1 stick) butter
2 cups heavy cream
1/8 tsp. garlic powder
1/8 tsp. ground black pepper
1/2 teaspoon (1 clove) minced garlic
1/4 cup freshly grated Parmesan cheese

Melt butter in medium saucepan over medium heat. Add minced garlic with the butter. Add cream, garlic powder, and pepper. Simmer, uncovered, for 12 to 15 minutes or until thick, stirring very frequently. When sauce has reached thick consistency, stir in Parmesan cheese. Use for Chicken Broccoli Alfredo, or just serve as is over pasta noodles. I also served with some garlic bread. Yum! Enjoy!
