Fun Findings Friday #162

TGIF! I’ve been looking forward to this weekend for quite some time and am so excited it’s finally here! There are several fun things on my agenda, including the TB Lightning playoff game, Hall & Oates concert (hooray for 80s music), and a pop over to the theme parks (Disney vs. Universal… hmm)! But enough about me, let’s get into this week’s fun findings.

The Blogging Blowout Conference

I’ve attended the BlogHer conference for the past 3 years, but unfortunately, this year I’m unable to make it out to LA for this year’s conference in August. If you’re unable to make it to a blogging conference far away either, I just found an awesome alternative. A blogging conference you can attend from home in your PJs! The Blogging Blowout is a virtual blogger conference taking place over two days next month (June 25 and 26) – one of which happens to be my birthday! They’re currently offering a 25% off discount on the $199 price through this weekend, so if you’ve been wanting to try a blogging conference out, this might be a good starting point!

KitchenAid Spiralizer Attachment

Like everyone else, I’ve been trying to implement some better eating habits. At least most days. Pasta is one of my  favorite foods, but unfortunately, it’s also carb city. I’ve been seeing some incredible recipes around for zucchini noodles and other healthy options, so I think an investment in this spiralizer ($82) needs to happen soon. Have you tried one out yourself? Any favorites?

Dashboard Confessional’s “May”

Back in high school I couldn’t get enough of Dashboard Confessional, mostly thanks to my favorite show (at the time), Laguna Beach. Well, a new song (“May”) was just released and is filled with so much nostalgia of the good ol’ DC days. The last album was released in 2009, but apparently a new one is on the horizon (date TBD). In the meantime I’ll just be over here jamming to my old favorites!

  • A virtual blogging conference? How interesting! I attended my first blogging conference in January and loved it. I may have to check this one out. I have been wanting to get a spiralizer. I may have to check this one out! I loved Laguna Beach!!! I think that is when I became addicted to Reality Tv. Have a great weekend!

    • How exciting! Which conference was it? I kind of want to go back and watch Laguna Beach all over again, haha. It definitely fueled my reality TV obsession too but over the years my watching has dwindled.

  • So we had bought a spiralizer from Amazon but it was such a pain to use! We ended upgrading to the Kitchen Aide attachment and I can’t wait to try it out!

  • I’ve been wanting to try a spiralizer, do you cook the zucchini after it’s cut or eat it raw?

    • You know, I’m not entirely sure. I think you cook it afterwards!

    • Yes! I never see it on menus out at restaurants either so it’s been even harder to try since I can’t find it anywhere. Hopefully soon I will!

    • What’s your favorite recipe for it? Any suggestions on a good one to start with?

      • Zoodles (zucchini noodles) are definitely the easiest. But when you pair it up with other veggies such as carrots or squash, it makes for a nice mixture!

  • I’ve been cooking a lot of spaghetti squash – but have been wanting to try spiralizing!

    • That sounds really good! Do you have a fave recipe for it?

      • I don’t really have a recipe. I cook the squash in the oven (per instructions I found on Google), then serve it with meat sauce and cheese just like regular spaghetti

    I’ve been dying to get the Kitchen Aid Spiralizer attachment! Also, I would be SO excited if Dashboard released a new album! My favorite concert I’ve ever been to was Dashboard, Yellowcard, and The Format…it was AMAZING! Oh, the good old days! :)

    • That sounds amazing! I was supposed to see The Format but they ended up being hours late and I had somewhere else to be so wasn’t able to see them :( I’d so be down if this tour happened again. Ahh, nostalgia!

  • My mom bought the inspiralize cookbook and she’s loved everything she’s made from it!! I’m a little more dubious because most of the dishes are cold veggie things, but she LOVES it for the warmer temps!
